Food poisoning is a very common problem throughout the world,specially the developed countries.Today i would like to discuss about food poisoning caused by Staphylococcus aureus.

Staphylococcal food poisoning usually presents with vomiting,abdominal pain and diarrhea.Vomiting and diarrhea are the predominant symptoms.This condition is caused by the enterotoxins of staphylococcus aureus.

The foods involved in this type of food poisoning are milk,milk products,custards,salads etc.The incubation period[The time interval between the point of infection to the onset of symptoms]is very short,averaging less than 6 hours.

One peculiar character of the enterotoxins of staphylococcus is that,this toxin is a pre-formed toxin.After contamination of the foods with Staphylococcus aureus,this bacteria synthesizes the toxin in the food itself.The enterotoxin,being relatively heat stable,survives moderate heating,even after the original bacteria dies.This toxin is then ingested with food and causes the symptoms of food poisoning.

This condition usually subsides with supportive management.Usually antibiotics are not required.The most important factor in the management of any type of food poisoning is Hydration.All steps are to be taken to prevent dehydration in the affected individual.The most important and the most convenient step is Oral re hydration therapy.Affected individual should take ample of fluids,to prevent dehydration.If the individual can not tolerate oral fluids or oral fluids are not affective in controlling dehydration,then he/she may require intravenous fluids.
